Lemon Pie Preparation: 15 minutes Serves: 6 - 8 Ingredients: 150g/5oz digestive biscuits, crushed 50g/2oz butter, melted 1 x 200g tub low- fat cream cheese 1 x 405g can skimmed sweetened condensed milk 150ml/ ¼pt Lemon juice - approximately 4 lemons 5 drops of green food colouring (optional) 200ml/ 7 fl oz cream, whipped Cocoa to dust Lemon wedges to serve Method: Mix the digestives and butter together and press into a 20cm (8 in) tart tin. Beat the cream cheese in a large bowl until softened. Add the condensed milk, lemon juice and zest, and colouring and whip until smooth. Pour into the tart tin, cover and chill for 3 hours or until firm. Top with whipped cream and lemon wedges and dust with cocoa before serving.
